In my humble opinion, one of the biggest mistakes hunters make during turkey season is leaving the legs and thighs behind and only taking the breast. Sure, the dark meat can be tough, but with a little effort, it transforms into something incredible. In our house, our favorite way to use wild turkey legs and thighs is by making tamales.
